The list here is not a list of the most popular Jewish dishes and products today and does not reflect anyone's idea of the most delicious or even just tolerable. But what is on this list is the dishes and products that have a special meaning for Jews - those that throughout history (no matter how it dates) most deeply reflected the rhythms of the Jewish calendar and the events that shaped Jewish traditions. Many dishes and products on the list are familiar to everyone - no one thought to leave over board chicken soup, or granny, or shakshuka, or... Matsu. But you will find here and those that for many will be completely unfamiliar, such as airlach or jelly from veal legs, as well as dishes from around the globe and even recipes, almost lost in history.
